Single malt Irish Whiskey, matured in ex-bourbon casks then finished in virgin oak casks, using wood species as our key differentiator to flavour delivery. Our three initial core releases focus on the species which are most commonly grown to make into barrels.. Quercus Alba – ‘The American White Oak’, is used almost exclusively by the American Bourbon industry, but is also used for a lot of white wine maturation. The oak is grown in the USA, and imparts sweet caramel, toffee, vanilla and coconut sweetness.
