Single malt Irish Whiskey, matured in ex-bourbon casks then finished in virgin oak casks, using wood species as our key differentiator to flavour delivery. Our three initial core releases focus on the species which are most commonly grown to make into barrels.. Quercus Petraea – the ‘Irish Oak’, most commonly used for brandy and wine production. We’ve chosen to source the wood from Slovenia which is synonymous with Italian wine production and is traditionally said to impart a slightly sweeter characteristic than their French counterparts.
