Very unusually among Irish Whiskey makers, we both grow our own Barley on the Estate (here in the Hilly Field with Carrauntoohil mountain as its stunning backdrop) and mature it alongside in The House of Contentment, our maturation Storehouse. The barley is small batch malted then distilled for us by our production partner into Pot Still Spirit, that returns to the Estate's special microclimate for maturation. We laid down our first casks in March 2019, made from our 2018 harvest. The famous '4 seasons in an hour' damp and changeable Killarney weather, caused by the collision of Gulf Stream, mountains and lake, makes our Whiskey interact with the casks far more than usual. The result is that our Whiskey seems to mature more quickly than anywhere in Ireland. We've been saying this for years but now have the proof in a bottle with our November 2022 Coming of Age Release of Lakeview Single Estate Whiskey. This Whiskey, at 3.5 years, should be rough and undrinkable but it's been really well received with most tasters say it tastes far older - reviews have varied from "very special" to "simply fabulous". This is just the start. We are working towards opening Ireland's most beautifully situated Premium Single Estate Grain to Glass Distillery onsite, next to our barley fields, bringing the whole process onto the Estate.
