Aged for eight years in former bourbon casks in Panama, where it absorbs some beautiful caramel and vanilla notes, as well as a slight hint of nutmeg and clove spice, before being finished in mature Irish Whiskey casks. These casks started life in the Western Isles of Scotland where they developed a deep flavour from aging a 10 Year Old Peated Scotch Whisky, before it moved to Ireland and mellowed by an Irish Whiskey. The character of these casks delivers a truly unique rum, left at cask strength for a full flavour and rich aroma. There is a strong nose of peat, which when tasted, is mild and pleasant, beautifully balancing with the other flavours.
